Ingredients (1 serving)

  • Ripe tomatoes, sliced thick

  • Ripe peach, sliced

  • Burrata cheese

  • Fresh basil or spinach

  • Olive oil

  • Salt and black pepper

  • Optional: chili flakes or lemon zest

How I made it

  1. Slice and rest: Slice tomatoes and peaches into wedges. Arrange on a plate and sprinkle lightly with salt. Let sit 3–5 minutes so juices release.

  2. Add burrata: Place burrata on the plate and tear it open gently so it spreads into the fruit.

  3. Finish: Drizzle olive oil generously. Add basil or spinach. Finish with black pepper and optional chili flakes or zest if tolerated.
