Sweet Potatoes and Green Beans

I woke up with a killer migraine today. Seeing as most things made me nauseous, i decided to go with plain sweet potato, greenbeens, and shrimp.

How it fits

POTS

Neutral-to-supportive. After being in bed all day, this helps with energy if I’m intentional about salt or pair it with electrolytes.

Lupus

Supportive. Simple protein and cooked vegetables feel safe when my body is already exhausted.

Vestibular migraine

Supportive. This is one of my go-to meals when my head is sensitive and nausea is hovering.

Shrimp, Japanese Sweet Potato, and Green Beans

Ingredients (1 bowl)

  • 1 Japanese sweet potato

  • 5–6 shrimp, peeled and deveined

  • 1 cup green beans

  • Olive oil

  • Salt

  • Very mild seasoning only (optional)


How I make it

  1. Bake the sweet potato

    • Bake at 400°F (205°C) for 40–45 minutes until soft.

    • Split and salt lightly.

  2. Cook the shrimp

    • Sauté in olive oil with salt until just cooked.

    • No heavy spices.

  3. Cook the green beans

    • Sauté or roast until fully tender.

    • Keep flavors simple.

  4. Eat slowly

    • Sitting down. Lights low. No rushing.


Notes

  • Migraine day rule: bland is better than bold

  • More POTS-friendly: add salt, butter, or a salty drink

  • Very low energy: roast everything on one tray and rest while it cooks
