Why I Make These
A couple of these stuffed peppers give me a quick, modest sodium boost—about 300 mg per two halves—useful when I feel that early POTS light‑headedness coming on but don’t need a full electrolyte drink. They take five minutes, all at the counter, so I’m not on my feet for long.
Ingredients — 1 snack portion (4 halves)
Item | Amount | Where I bought it |
Mini sweet peppers | 4 | Harris Teeter, produce bag |
Whipped cream cheese | 3 Tbsp | Trader Joe’s |
Everything‑bagel seasoning | 1 tsp | Trader Joe’s |
Optional flaky salt | pinch | pantry |
Method (5 minutes)
Rinse and halve the peppers lengthwise; remove seeds.
Spread roughly ¾ Tbsp whipped cream cheese into each half.
Sprinkle everything‑bagel seasoning on top. Add a pinch of flaky salt if you need extra sodium.
Eat right away or keep chilled up to four hours—the peppers stay crisp.
