Why I Make These

A couple of these stuffed peppers give me a quick, modest sodium boost—about 300 mg per two halves—useful when I feel that early POTS light‑headedness coming on but don’t need a full electrolyte drink. They take five minutes, all at the counter, so I’m not on my feet for long.

Method (5 minutes)

  1. Rinse and halve the peppers lengthwise; remove seeds.

  2. Spread roughly ¾ Tbsp whipped cream cheese into each half.

  3. Sprinkle everything‑bagel seasoning on top. Add a pinch of flaky salt if you need extra sodium.

  4. Eat right away or keep chilled up to four hours—the peppers stay crisp.
