What this is
A soft roasted tomato stuffed with herby rice, extra rice on the side, and a dollop of yogurt with olive oil and pepper. It’s warm, gentle, and surprisingly filling without being overwhelming.
This is sit-down-and-breathe food.
Ingredients (1 plate)

How I made it
Roast the tomato until soft but holding its shape.
Mix cooked rice with olive oil, salt, and herbs.
Stuff tomato, add extra rice on the side.
Spoon yogurt onto the plate, drizzle oil, season.
Eat slowly, seated, feet up if possible.
Why this worked today
Warm carbs without heaviness
Salt helped without effort
Yogurt added protein without being too much
Didn’t leave me wiped out afterward
