Sesame Noodles

i actually felt fine today.no dizziness, no joint pain, no migraine warning signs. which is exactly why i didn’t want to mess it up.

i’ve learned the hard way that feeling good doesn’t mean i can skip meals or eat like an idiot and expect my body to stay chill. if i don’t eat real food on the good days, the bad ones show up faster.

so i made noodles. nothing heavy, nothing risky. warm, salty, easy to digest. the kind of meal that keeps things steady instead of pushing my luck.

this wasn’t about fixing anything. it was about staying where i was.


Condition

How it fits

POTS

Neutral-to-supportive if I salt it well. Helps maintain energy on days I want to stay upright.

Lupus

Supportive. Cooked vegetables + simple carbs don’t stress my body when things are calm.

Vestibular migraine

Usually safe. I keep citrus light and skip it entirely if I’ve had poor sleep.

Sesame Vegetable Noodles with Lemon

Ingredients (1–2 servings)

  • Rice noodles or soba (about 4 oz dry)

  • 1 cup carrots, julienned

  • 1 cup zucchini or cucumber, sliced

  • ½ cup red bell pepper

  • ¼ cup red onion or shallot

  • Soy sauce or tamari, to taste

  • 1–2 tsp sesame oil

  • 1 tbsp neutral oil

  • Lemon juice or slice (optional)

  • Sesame seeds (optional)


How I make it

  1. Cook noodles and drain.

  2. Sauté vegetables briefly in neutral oil until just soft.

  3. Add noodles, soy sauce, and sesame oil.

  4. Taste and add more salt than you think you need.

  5. Finish with lemon only if it’s a safe day.


Notes

  • This is a maintenance meal, not a rescue meal.

  • On POTS days, I push the salt harder or eat this with broth.

  • On migraine-adjacent days, I skip citrus completely.
