How my symptoms showed up

  • POTS: sluggish circulation without dizziness - that heavy, slow feeling where standing feels possible but effortful

  • Migraine: cognitive fuzz and eye strain rather than pain, usually a sign I need gentle fuel soon

  • Lupus: mild hand stiffness and low-grade fatigue, not a flare, just reduced tolerance for effort

Ingredients (1 serving)

  • 1 slice good bread

  • Whole-milk ricotta

  • Yellow and orange cherry tomatoes, sliced

  • Olive oil

  • Salt and black pepper

  • Fresh chives

How I made it

  1. Toast the bread

Toast until the surface is crisp but the center still has give. This matters for texture.

  2. Season the ricotta

Spoon ricotta into a small bowl. Add a pinch of salt and a drizzle of olive oil. Stir until smooth and lightly glossy.

  3. Prep the tomatoes

Slice tomatoes and season lightly with salt. Let sit 1–2 minutes so they release a bit of juice.

  4. Assemble

Spread ricotta generously over the toast. Layer tomatoes evenly on top.

  5. Finish

Drizzle olive oil lightly over the tomatoes. Add black pepper and finely chopped chives.
