Ricotta Toast with Yellow Tomatoes and Chives

Ingredients (1 serving)
1 slice good bread
Whole-milk ricotta
Yellow and orange cherry tomatoes, sliced
Olive oil
Salt and black pepper
Fresh chives
How I made it
Toast the bread
Toast until the surface is crisp but the center still has give. This matters for texture.
Season the ricotta
Spoon ricotta into a small bowl. Add a pinch of salt and a drizzle of olive oil. Stir until smooth and lightly glossy.
Prep the tomatoes
Slice tomatoes and season lightly with salt. Let sit 1–2 minutes so they release a bit of juice.
Assemble
Spread ricotta generously over the toast. Layer tomatoes evenly on top.
Finish
Drizzle olive oil lightly over the tomatoes. Add black pepper and finely chopped chives.
