Oatmeal with Caramelized Banana, Greek Yogurt, and Farmer's Market Cherries

Ingredients (makes 1 bowl)
Oats
1/2 cup rolled oats
1 cup milk or water (or half and half)
Pinch of salt
Pinch of cinnamon
Caramelized banana
1 ripe banana, sliced into rounds
1 tsp butter
1 tsp brown sugar or honey
Pinch of cinnamon
Toppings
2 to 3 tbsp Greek yogurt
Small handful of cherries
Drizzle of olive oil or honey to finish
Steps
Cook the oats — Add oats, milk, salt, and cinnamon to a small saucepan over medium heat. Stir frequently and cook for about 5 minutes until thick and creamy. If it gets too thick, add a splash more milk and stir it through. Take off the heat and let it sit for a minute — it thickens a little more as it cools.
Caramelize the banana — While the oats are finishing, heat a small pan on medium. Add the butter and let it melt. Add the banana slices in a single layer and sprinkle the brown sugar and cinnamon over the top. Don't touch them for about 90 seconds — you want them to develop a golden crust on the bottom. Then flip carefully and cook another minute. They should be jammy and deeply golden. Take them off the heat immediately or they'll turn to mush.
Build the bowl — Spoon the oats into a bowl. Arrange the caramelized banana slices over one side. Add a cold dollop of Greek yogurt on the other side. Scatter the dried cherries alongside.
Finish — Drizzle olive oil or honey over the whole bowl right before eating. The olive oil sounds unusual but it makes everything taste richer and ties the whole thing together. Don't skip it.
