Mushroom Noodle Soup

This was a POTS + fatigue day. I stood up to get water and immediately had to lean against the counter because my heart rate jumped and my legs felt weirdly hollow.

What this is
Light broth, thin noodles, deeply roasted mushrooms, and a little broccoli for something green. It’s not spicy. It’s not aggressive. It’s the kind of soup you can eat slowly with both feet on the floor.
This is sit-down food.
Ingredients (1 bowl)

Thin noodles | ½ cup cooked | Rice or wheat |
Mushrooms | 1 cup | Roasted or pan-seared |
Broccoli | Small handful | Roasted or steamed |

Salt + pepper | To taste | Don’t under-salt |
How I made it
Roast or pan-sear mushrooms until deeply browned.
Warm broth gently - no boiling.
Add noodles and broccoli.
Top with mushrooms and extra broth as needed.
Eat sitting down. Pause between bites.
