  1. Ribbon the cucumber lengthwise; pat dry with a paper towel.

  2. Spread a thin layer of cream cheese over each ribbon.

  3. Lay a strip of smoked salmon along the ribbon; dot with avocado pieces.

  4. Roll tightly from one end; secure with a toothpick. Repeat for four rolls.

  5. Plate and eat immediately, seated—zero stove time.
