I’m having dizziness (POTS) late this afternoon—enough to make me lean on the desk when I stand or go up. I wanted a snack that gives me a quick sodium boost without cooking and, if possible, some anti-inflammatory fats for general lupus maintenance since I had a flare up last week.

5-minute seated method
Ribbon the cucumber lengthwise; pat dry with a paper towel.
Spread a thin layer of cream cheese over each ribbon.
Lay a strip of smoked salmon along the ribbon; dot with avocado pieces.
Roll tightly from one end; secure with a toothpick. Repeat for four rolls.
Plate and eat immediately, seated—zero stove time.
