Crispy Potstickers with Blistered Green Beans and Ricotta

Recipe


Ingredients

Makes 1 large bowl or 2 smaller servings

Potstickers

  • 8 to 10 frozen or homemade potstickers

  • 1 tbsp neutral oil

  • 1/3 cup water

  • Optional: 1 tsp sesame oil for finishing

Blistered green beans

  • 2 cups fresh green beans, trimmed

  • 1 tbsp olive oil or neutral oil

  • 1/2 tsp kosher salt

  • Black pepper

  • Optional: 1/2 tsp garlic powder

  • Optional: 1 tsp soy sauce or coconut aminos

Ricotta

  • 1/2 cup whole-milk ricotta

  • Pinch of salt

  • 1 tsp olive oil

  • Optional black pepper


Steps

1. Prep the green beans

  1. Rinse the green beans under cold water.

  2. Trim off the tough stem ends.

  3. Dry them very well with a kitchen towel or paper towels.

The drying step matters. Wet green beans steam instead of getting the dark blistered spots you see in the photo.


2. Heat the pan for the green beans

  1. Place a large skillet over medium-high heat.

  2. Let it heat for about 1 to 2 minutes.

  3. Add 1 tablespoon oil.

  4. Swirl the pan so the oil coats the bottom.


3. Blister the green beans

  1. Add the green beans in a mostly single layer.

  2. Leave them alone for about 2 minutes so the first side can brown.

  3. Toss or turn them.

  4. Continue cooking for another 5 to 7 minutes, tossing every minute or so.

  5. Season with salt and black pepper.

You want:

  • wrinkled skin

  • dark brown blistered spots

  • tender centers

  • a little bite left

If they are browning before they soften:

  1. Add 1 tablespoon water.

  2. Cover the pan for 1 minute.

  3. Remove the lid and let the remaining water evaporate.

If using garlic powder or soy sauce, add it during the final minute.

  1. Transfer the beans to a plate and cover loosely so they stay warm.


Cook the potstickers

4. Wipe out the skillet

You can use the same pan.

  1. Carefully wipe out any burned seasoning.

  2. Return the skillet to medium heat.

  3. Add about 1 tablespoon neutral oil.


5. Arrange the potstickers

  1. Place the frozen potstickers in the skillet flat-side down.

  2. Leave a little space between each one.

  3. Cook without moving them for 2 to 3 minutes.

Lift one with a spatula. The bottom should be golden brown.


6. Steam them

  1. Carefully pour 1/3 cup water into the skillet.

  2. Immediately cover with a lid.

Be careful — the oil may spit when the water hits the pan.

  1. Reduce heat slightly to medium-low.

  2. Steam for about 5 to 7 minutes, or according to the package instructions.

The wrappers should soften and the filling should be completely hot.


7. Re-crisp the bottoms

  1. Remove the lid.

  2. Let any remaining water evaporate.

  3. Increase the heat back to medium.

  4. Cook uncovered for another 1 to 3 minutes.

This second crisping step is what gives the dumplings the browned, chewy edges in the photo.

  1. Turn a few dumplings onto their sides and let them brown for another 30 to 60 seconds if you want more color.

  2. Drizzle with a tiny amount of sesame oil if using.


Prepare the ricotta

8. Season the ricotta

  1. Add ricotta to a small bowl.

  2. Stir in a pinch of salt.

  3. Add 1 teaspoon olive oil.

  4. Stir briefly.

Do not whip it completely smooth. Leaving it thick and slightly textured gives you the look in the photo.

If using black pepper, add a little now.


Assemble the bowl

9. Plate everything

  1. Spoon the ricotta into one side of a wide bowl.

  2. Add the blistered green beans beside it.

  3. Arrange the hot potstickers around the remaining space.

  4. Add another small pinch of salt over the beans if this is the character's POTS-targeted meal.

  5. Serve immediately so the dumplings stay crisp.
