Turmeric Lentil, Broccoli, and Cauliflower Bowl with White Rice

Ingredients

Makes 2 generous bowls

White rice

  • 1 cup basmati or jasmine rice

  • 1 1/2 cups water

  • 1/4 tsp salt

Lentil and vegetable mixture

  • 3/4 cup cooked green or brown lentils

    or

  • 1/3 cup dry green/brown lentils, cooked separately

  • 2 cups broccoli florets

  • 2 cups cauliflower florets

  • 1/2 small yellow onion, finely diced

  • 2 garlic cloves, minced

  • 1 tbsp extra-virgin olive oil

  • 1 tsp ground turmeric

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/4 tsp ground ginger

  • 1/4 tsp smoked paprika, optional

  • 1/2 tsp kosher salt, plus more to taste

  • Black pepper

  • 1/3 to 1/2 cup vegetable broth or water

  • 2 tbsp chopped parsley or cilantro, optional


Steps

1. Cook the lentils first if starting from dry

If using canned or already-cooked lentils, skip ahead to the rice.

  1. Place 1/3 cup dry lentils in a fine-mesh strainer.

  2. Rinse thoroughly under cold water.

  3. Look through them quickly and remove any small stones or damaged lentils.

  4. Add the lentils to a small saucepan.

  5. Cover with about 1 1/2 cups water.

  6. Bring to a boil over medium-high heat.

  7. Once boiling, reduce the heat to low.

  8. Partially cover the saucepan.

  9. Simmer for about 20–25 minutes.

Green and brown lentils should become tender while still holding their shape.

  1. Check them around 18 minutes.

  2. Add more water if the pan is becoming dry before the lentils soften.

  3. Once tender, drain off any excess liquid.

  4. Set the lentils aside.

Do not cook them until mushy. You want visible whole lentils throughout the vegetable mixture like in the photo.


2. Rinse the rice

  1. Put the rice in a fine-mesh strainer.

  2. Rinse it under cold running water for about 30 seconds.

  3. Move the rice around with your fingers.

  4. Continue until the water becomes considerably less cloudy.

  5. Shake off excess water.


3. Cook the rice

  1. Add the rinsed rice to a medium saucepan.

  2. Add 1 1/2 cups water.

  3. Add 1/4 teaspoon salt.

  4. Bring to a boil over medium-high heat.

  5. Once boiling, reduce the heat to low.

  6. Cover tightly with a lid.

  7. Cook for about 12–15 minutes, or according to the package directions.

  8. Turn the heat off.

  9. Leave the rice covered for another 10 minutes.

Do not open the lid during the resting period.

  1. Remove the lid.

  2. Fluff gently with a fork.

  3. Put the lid back on loosely while you finish the vegetables.


4. Prepare the broccoli and cauliflower

  1. Wash the broccoli and cauliflower thoroughly.

  2. Cut both into small-to-medium florets.

Keep the pieces fairly small because this dish works best when lentils and vegetables can fit together on the spoon.

  1. Cut any thick broccoli stems into thin pieces rather than throwing them away.

  2. Set the vegetables aside.


5. Prepare the onion and garlic

  1. Peel the onion.

  2. Dice it finely.

  3. Peel the garlic.

  4. Mince it finely.

Keep both near the stove before you start cooking because the spices cook quickly.


6. Start the vegetable mixture

  1. Place a large skillet or sauté pan over medium heat.

  2. Add 1 tablespoon extra-virgin olive oil.

  3. Let it warm for about 30 seconds.

  4. Add the diced onion.

  5. Sprinkle with a small pinch of salt.

  6. Cook for about 4–5 minutes, stirring occasionally.

The onion should become soft and translucent.

  1. Add the minced garlic.

  2. Stir for about 30 seconds.

Do not let the garlic brown heavily.


7. Bloom the spices

Add directly to the onion mixture:

  • turmeric

  • cumin

  • coriander

  • ginger

  • optional smoked paprika

  • black pepper

  • Stir continuously for about 30 seconds.

Heating the spices in the oil before adding liquid makes the whole dish taste much more developed.

The mixture should become bright yellow from the turmeric.


8. Add the cauliflower

Cauliflower takes slightly longer to soften than broccoli, so it goes in first.

  1. Add the cauliflower florets to the pan.

  2. Toss until the florets are coated in the turmeric mixture.

  3. Add about 2 tablespoons broth or water.

  4. Cover the skillet.

  5. Reduce heat slightly to medium-low.

  6. Cook for about 4 minutes.


9. Add the broccoli

  1. Remove the lid.

  2. Add the broccoli.

  3. Sprinkle in about 1/2 teaspoon salt.

  4. Toss everything together.

  5. Add another 2–3 tablespoons broth or water.

  6. Cover again.

  7. Cook for another 4–5 minutes.

The broccoli should become bright green and the cauliflower should be nearly tender.


10. Add the lentils

  1. Remove the lid.

  2. Add the cooked lentils.

  3. Fold them gently through the vegetables.

Try not to mash them.

  1. Add about 1/4 cup broth or water.

  2. Stir well so the lentils pick up the turmeric and spices.

  3. Reduce the heat to low.

  4. Cook uncovered for 4–6 minutes.

During this time, the liquid should reduce and create a light coating around the vegetables and lentils rather than a soup.


11. Check the vegetables

Pierce a cauliflower piece with a fork.

You want:

  • cauliflower tender all the way through

  • broccoli soft but still intact

  • lentils tender and separate

  • very little free liquid remaining in the pan

If the vegetables are still firm:

  1. Add another 2 tablespoons water.

  2. Cover.

  3. Cook another 2–3 minutes.

If there is too much liquid:

  1. Leave the pan uncovered.

  2. Raise the heat to medium.

  3. Cook for another minute or two while stirring gently.


12. Taste and finish the lentils

  1. Taste the vegetable mixture.

  2. Add more salt if needed.

  3. Add a few turns of black pepper.

  4. Stir in chopped parsley or cilantro if using.

  5. Turn off the heat.

  6. Let the mixture sit for 2 minutes before serving.

This gives the lentils time to absorb a little more of the seasoning.


13. Assemble the bowls

  1. Divide the fluffy white rice between two bowls.

  2. Keep the rice mostly on one side, like the photo.

  3. Spoon the turmeric lentil mixture onto the other side.

  4. Make sure each serving gets a combination of:

    • lentils

    • broccoli

    • cauliflower

  5. Spoon any remaining seasoned liquid from the pan over the vegetables.

  6. Finish with a small drizzle of extra-virgin olive oil if you want a little more richness.
