Ingredients (1 serving)

  • Plain yogurt (full-fat or Greek)

  • Ripe persimmon, sliced

  • Granola (not overly sweet)

  • Peanut butter

  • Optional drizzle of honey or olive oil


How I made it

  • Spoon yogurt into a bowl and smooth it out.

  • Add granola on one side.

  • Layer persimmon slices next to it.

  • Finish with a spoon of peanut butter and a light drizzle if needed.

Eat slowly. Before symptoms escalate.


Why I’d make this again

  • Sweet without being destabilizing

  • Easy to portion based on how I feel

  • Works when I need food but not heaviness
