Ingredients (1 plate)
Chicken
1 chicken breast or thigh, cooked and sliced
Olive oil
Salt, pepper
Optional spices: paprika, cumin, garlic powder (skip if sensitive)
Chopped salad
1 cup chopped romaine or cucumber
1/4 cup red onion, diced
1 to 2 tbsp chopped olives (optional)
1/3 to 1/2 cup feta
Optional dressing: olive oil + salt + pepper
Steps
Season chicken with salt, pepper, and spices. Pan-sear or bake until fully cooked, then slice.
Chop salad ingredients and toss with feta and a drizzle of olive oil.
Plate chicken next to the salad and add extra salt if you are targeting POTS support.
