  • Cooked soba noodles

  • Cucumber slices

  • Carrot ribbons

  • Edamame or similar (optional)

  • Light sesame or soy-based dressing


How I made it

  • Cook noodles and rinse briefly to cool.

  • Add vegetables and toss gently with dressing.

  • Eat slightly cool, not cold.

Sit down. Eat slowly. Pause between bites.

  • Easy to adjust portions mid-meal
