Cooked soba noodles
Cucumber slices
Carrot ribbons
Edamame or similar (optional)
Light sesame or soy-based dressing
How I made it
Cook noodles and rinse briefly to cool.
Add vegetables and toss gently with dressing.
Eat slightly cool, not cold.
Sit down. Eat slowly. Pause between bites.

Light but not flimsy
Easy to adjust portions mid-meal
