Symptom check-in

POTS: I had no POTS symptoms today — no dizziness when I stood up, no racing heart, and no trouble breathing with simple exercise.

Vestibular migraine: I had no vestibular migraine symptoms today — no vertigo, no nausea, no vomiting, and no light sensitivity.

Lupus: I had body aches and a red rash across my cheeks today. I wanted something warm and anti-inflammatory-leaning today, so I made a tomato-lentil stew with black beans, corn, vegetables, and olive oil.

Lentils, black beans, tomatoes, carrots, peppers, corn, and olive oil make this plant-forward and anti-inflammatory-leaning

Recipe

Ingredients

Makes 4 servings

Stew

  • 1 tbsp extra-virgin olive oil

  • 1 small yellow onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 bell pepper, diced

  • 2 garlic cloves, minced

  • 1 cup dry brown or green lentils, rinsed

  • 1 can black beans, drained and rinsed

  • 1 cup corn, frozen or canned

  • 1 can diced tomatoes

  • 2 tbsp tomato paste

  • 4 cups vegetable broth

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp ground coriander

  • 1/2 tsp dried oregano

  • 1/2 tsp kosher salt, plus more to taste

  • Freshly ground black pepper

Topping

  • 1/2 cup pasteurized plain Greek yogurt

  • Extra black pepper

  • Optional chopped parsley or cilantro

Toast

  • 4 slices whole-grain or seeded bread

  • 1 tsp olive oil, optional

Steps

1. Rinse the lentils

  1. Put the lentils in a fine-mesh strainer.

  2. Rinse under cold running water for about 30 seconds.

  3. Pick through quickly for any debris.

  4. Drain well.

2. Prepare the vegetables

  1. Dice the onion.

  2. Peel and dice the carrots.

  3. Dice the celery.

  4. Dice the bell pepper.

  5. Mince the garlic.

Try to keep everything fairly small so the stew has an even texture.

3. Start the base

  1. Heat a large pot over medium heat.

  2. Add the olive oil.

  3. Add:

    • onion

    • carrots

    • celery

    • bell pepper

  4. Add a small pinch of salt.

  5. Cook for 6–8 minutes, stirring occasionally.

The vegetables should soften and the onion should become translucent.

4. Add the garlic and spices

  1. Add the garlic.

  2. Add:

    • cumin

    • smoked paprika

    • coriander

    • oregano

    • black pepper

  3. Stir for about 30 seconds.

The spices should smell fragrant, but do not let them burn.

5. Add the tomato paste

  1. Add 2 tablespoons tomato paste.

  2. Stir it into the vegetables.

  3. Cook for 1–2 minutes.

The paste should darken slightly.

6. Add the lentils and tomatoes

  1. Add the rinsed lentils.

  2. Add the diced tomatoes.

  3. Pour in the broth.

  4. Add the salt.

  5. Stir thoroughly.

7. Simmer

  1. Bring the pot to a boil.

  2. Reduce the heat to low.

  3. Partially cover.

  4. Simmer for 25–30 minutes.

  5. Stir every few minutes.

The lentils should become tender but still hold some shape.

8. Add the black beans and corn

  1. Add the drained black beans.

  2. Add the corn.

  3. Stir.

  4. Simmer for another 8–10 minutes.

This is enough time to heat everything through without turning the beans mushy.

9. Adjust the thickness

If the stew is too thick:

  1. Add broth or water 1/4 cup at a time.

If it is too thin:

  1. Simmer uncovered for another 5–10 minutes.

The texture should be thick and spoonable, like the photo, but still clearly a stew.

10. Taste and season

Taste a spoonful with lentils, beans, and vegetables.

Add:

  • more salt if needed

  • more black pepper

  • another pinch of cumin or smoked paprika if it tastes flat

Keep it mild if you want the meal to stay easy on the stomach.

11. Toast the bread

  1. Toast the bread until crisp at the edges.

  2. Brush lightly with olive oil if you want it richer.

  3. Cut in half if needed for serving.

12. Add the yogurt

  1. Spoon the stew into bowls.

  2. Add a large spoonful of Greek yogurt in the center.

  3. Crack black pepper over the top.

  4. Add parsley or cilantro if using.

The cold yogurt softens the tomato and spice flavor and makes the stew creamier as you stir it in.
