Ingredients
Makes about 8–10 dumplings / 2 servings
Beef filling
1 lb lean ground beef
1/2 small yellow onion, very finely diced
1 small carrot, grated
1/2 cup finely chopped cabbage
2 garlic cloves, minced
1 tbsp olive oil
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp ground coriander
1 tbsp soy sauce or coconut aminos, optional
2 tbsp water or broth
Wrappers
8–10 round rice-paper wrappers
Bowl of warm water
1–2 tsp olive or avocado oil for cooking
Cucumber yogurt salad
1 large cucumber
3/4 cup plain Greek yogurt
1 tbsp chopped dill
1 tbsp chopped parsley or mint, optional
1 tsp olive oil
1/4 tsp garlic powder or 1 small grated garlic clove, optional
Salt
Black pepper
Optional: 1 tsp lemon juice
Steps
1. Prepare all of the vegetables
The filling needs to be fairly fine so the rice paper does not tear.
Dice the onion into very small pieces.
Peel and grate the carrot.
Chop the cabbage finely.
Mince the garlic.
Set everything beside the stove before you begin cooking.
2. Brown the beef
Heat a large skillet over medium-high heat.
Add about 1 tablespoon olive oil.
Add the ground beef.
Spread it across the pan and leave it alone for about 1 minute so some of the meat actually browns.
Break the beef into very small pieces with a wooden spoon or spatula.
Continue cooking for about 4–5 minutes, until most of the pink is gone.
You want the pieces fairly small because large chunks make the dumplings difficult to wrap.
3. Add the vegetables
Add the diced onion, carrot, and cabbage to the beef.
Stir everything together.
Cook over medium heat for 4–5 minutes, stirring occasionally.
Add the garlic.
Cook another 30 seconds.
The vegetables should soften considerably but do not need to disappear into the meat.
4. Season the filling
Add:
salt
black pepper
cumin
smoked paprika
coriander
Stir thoroughly.
If using soy sauce or coconut aminos, add it now.
Add 2 tablespoons water or broth, stir, and cook another 1–2 minutes.
You want the filling juicy but not wet. Excess liquid will make the rice paper difficult to seal.
5. Cool the filling
This part matters.
Transfer the beef mixture to a plate or shallow bowl.
Spread it out slightly.
Let it cool for 10–15 minutes.
Do not put piping-hot filling onto softened rice paper or the wrapper can become too delicate and tear.
Make the cucumber yogurt salad while the beef cools
6. Prepare the cucumber
Wash the cucumber.
Cut it lengthwise.
Chop into small cubes.
If your cucumber is especially watery:
Place the pieces in a colander.
Sprinkle lightly with salt.
Let sit for 5–10 minutes.
Pat dry with a paper towel.
This prevents watery yogurt salad.
7. Make the yogurt dressing
In a bowl, combine:
Greek yogurt
dill
optional parsley or mint
olive oil
garlic or garlic powder
salt
black pepper
optional lemon juice
Stir until smooth.
8. Finish the cucumber salad
Add chopped cucumber to the yogurt.
Fold together until every piece is coated.
Taste.
Add another pinch of salt if needed.
Refrigerate while you assemble the dumplings.
The salad tastes better after sitting for even 10 minutes.
Assemble the dumplings
9. Set up your wrapping station
Place beside you:
bowl of warm water
rice-paper wrappers
cooled beef filling
clean plate or cutting board
finished-dumpling plate
Rice paper gets sticky quickly, so having everything ready makes this much easier.
10. Soften one rice-paper wrapper
Fill a wide shallow bowl or plate with warm water.
Dip one rice-paper wrapper into the water.
Rotate it so the entire wrapper becomes wet.
Remove after about 5–10 seconds.
It may still feel slightly firm when you remove it. That is fine — it continues softening while it sits.
Do not leave it soaking until completely floppy or it becomes very difficult to handle.
11. Fill the wrapper
Lay the softened wrapper flat on your work surface.
Place about 2 heaping tablespoons of beef filling in the center.
Keep the filling compact rather than spreading it outward.
Do not overfill. These little pouches are much easier to seal when they are slightly underfilled.
12. Form the pouch
To get the gathered shape in the photo:
Lift one edge of the wrapper toward the center.
Lift the opposite edge.
Bring the remaining sides upward.
Gather the loose rice paper above the filling.
Gently twist or pinch the top together.
The damp rice paper should stick to itself.
If one wrapper tears easily, you can use two rice-paper sheets per dumpling for a thicker shell.
13. Repeat
Continue soaking, filling, and folding one wrapper at a time.
Do not soften all the wrappers at once — they will stick together.
Set finished dumplings on a lightly oiled plate without letting them touch.
Cook the dumplings
14. Heat the pan
Place a nonstick skillet over medium heat.
Add about 1–2 teaspoons oil.
Let it heat for about 1 minute.
15. Add the dumplings
Place the dumplings into the skillet with space between them.
Do not let them touch — softened rice paper sticks very easily.
Cook for 2–3 minutes on the first side.
The bottoms should begin turning golden.
16. Turn them carefully
Use a thin spatula rather than tongs if possible.
Gently loosen each dumpling before flipping.
Turn and cook another 2 minutes.
Rotate again as needed to brown another side.
You are not trying to make every inch crunchy. The best texture is a combination of chewy rice paper with browned, slightly crisp spots.
17. Make sure the centers are hot
Because the beef filling was already cooked, you are primarily heating the center and cooking the wrapper.
Cook until:
wrappers are translucent,
surfaces have some golden spots,
and the filling is hot throughout.
Usually this takes around 6–8 minutes total depending on dumpling size.
18. Rest before eating
Transfer the dumplings to a plate and leave them alone for 2–3 minutes.
Straight out of the pan, the rice paper can be extremely sticky. A short rest makes them much easier to pick up and eat.
Plate it
Spoon a generous portion of cucumber yogurt salad into one side of a bowl.
Arrange 4–5 warm dumplings beside it.
Add a little extra salt to the dumplings if this is the character's POTS-targeted meal.
Serve the yogurt salad cold against the warm dumplings.
