Ingredients (1 bowl)
1 cup broccoli florets
1 cup zucchini, sliced
1 cup squash (butternut or similar), cubed
1/2 cup mushrooms, sliced
2 to 3 tbsp sun-dried tomatoes, sliced (optional)
1 to 2 tbsp olive oil
Salt and pepper
Optional: garlic powder, paprika, oregano
Add-ons if you want this to be a full meal:
1/2 to 1 cup rice or potatoes
Chicken, tofu, eggs, or beans
Steps
Heat oven to 425°F.
Toss all vegetables with olive oil, salt, and any spices.
Roast 20 to 30 minutes, stirring once, until browned and tender.
Eat as-is, or serve over rice/potatoes and add protein.
