Ingredients (1 bowl)

  • 1 cup broccoli florets

  • 1 cup zucchini, sliced

  • 1 cup squash (butternut or similar), cubed

  • 1/2 cup mushrooms, sliced

  • 2 to 3 tbsp sun-dried tomatoes, sliced (optional)

  • 1 to 2 tbsp olive oil

  • Salt and pepper

  • Optional: garlic powder, paprika, oregano

Add-ons if you want this to be a full meal:

  • 1/2 to 1 cup rice or potatoes

  • Chicken, tofu, eggs, or beans


Steps

  1. Heat oven to 425°F.

  2. Toss all vegetables with olive oil, salt, and any spices.

  3. Roast 20 to 30 minutes, stirring once, until browned and tender.

  4. Eat as-is, or serve over rice/potatoes and add protein.
