Grilled Chicken Caesar Salad with Avocado, Parmesan, and Croutons

Ingredients
Makes 2 large entrée salads
Chicken
2 small boneless, skinless chicken breasts, about 10–12 oz total
1 tbsp extra-virgin olive oil
3/4 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp paprika
1/4 tsp black pepper
Salad
2 large romaine hearts
1 large ripe avocado
1 1/2 cups croutons
1/3 cup finely grated Parmesan
Optional microgreens or pea shoots for the top
Creamy Caesar-style dressing
1/2 cup plain Greek yogurt
2 tbsp mayonnaise
3 tbsp finely grated Parmesan
1 tbsp extra-virgin olive oil
1 tsp Dijon mustard
1 small garlic clove, finely grated
or 1/4 tsp garlic powder
1–2 tsp lemon juice
1–3 tbsp water, as needed
1/4 tsp kosher salt, plus more to taste
Freshly ground black pepper
If making homemade croutons
2 thick slices sourdough or rustic bread
1 tbsp olive oil
1/4 tsp garlic powder
1/4 tsp kosher salt

Steps
1. Prepare the romaine
Separate the romaine leaves.
Wash them thoroughly under cold running water.
Dry completely in a salad spinner or with clean towels.
Chop into large bite-size pieces.
Put the chopped romaine in the refrigerator while you make everything else.
Cold, dry lettuce matters here. Warm or wet romaine makes the dressing slide off instead of coating the leaves.
2. Make the croutons if you are not using store-bought
Heat the oven to 400°F.
Cut the bread into roughly 3/4-inch cubes.
Put the cubes on a sheet pan.
Drizzle with olive oil.
Sprinkle with:
garlic powder
kosher salt
black pepper
Toss thoroughly with your hands.
Spread into a single layer.
Bake for 6 minutes.
Toss the cubes.
Bake another 4–6 minutes, until golden and crisp.
Remove from the oven and let them cool completely.
They crisp more as they cool, so do not keep baking until they are rock-hard.
3. Prepare the chicken
Put the chicken breasts on a cutting board.
If they are very thick, slice them horizontally into thinner cutlets.
Pat them completely dry with paper towels.
Drizzle with olive oil.
Season both sides with:
salt
garlic powder
oregano
paprika
black pepper
Rub the seasoning into the chicken so everything is evenly coated.
Let the chicken sit for about 10 minutes while the pan heats.
4. Heat the skillet or grill pan
Put a grill pan or heavy skillet over medium-high heat.
Let it heat for about 2 minutes.
Add a very thin layer of olive oil if the pan needs it.
The pan should be hot enough to brown the chicken immediately when it hits the surface.
5. Cook the chicken
Lay the chicken into the hot pan.
Do not move it for about 4–5 minutes.
Check underneath.
You want a deep golden sear.
Flip the chicken.
Cook another 4–5 minutes, depending on thickness.
Check that the thickest part reaches 165°F.
Transfer the chicken to a cutting board.
Rest for 5–7 minutes before slicing.
Resting keeps the chicken juicy instead of losing all of its moisture onto the cutting board.
6. Make the dressing
While the chicken rests:
Add the Greek yogurt to a small bowl.
Add mayonnaise.
Add grated Parmesan.
Add olive oil.
Add Dijon.
Add garlic.
Add 1 teaspoon lemon juice.
Add salt and black pepper.
Whisk until smooth.
The dressing will be fairly thick.
Add 1 tablespoon water.
Whisk again.
Add more water 1 teaspoon at a time until the dressing is thick but pourable.
You want it to cling to lettuce rather than run to the bottom of the bowl.
7. Adjust the dressing
Taste it before using.
If it needs:
more salt: add another pinch
more Parmesan flavor: add another tablespoon Parmesan
more acidity: add the second teaspoon lemon juice
less sharpness: add another spoonful of Greek yogurt
thinner texture: add another teaspoon of water
For the character's POTS-targeted version, I would make sure the dressing is properly salted rather than relying entirely on the Parmesan.
8. Slice the chicken
Take the rested chicken.
Slice it across the grain into strips about 1/2 inch thick.
Keep the pieces relatively large like the chicken in the photo.
Do not dice it into tiny cubes. The big slices make the chicken stay juicier and look more substantial.
9. Prepare the avocado
Do this close to serving so it does not brown.
Cut the avocado in half.
Remove the pit.
Scoop one half from the skin while keeping it intact.
Place cut-side down on a cutting board.
Slice lengthwise into thin pieces.
Gently fan the slices apart.
Repeat with the other half if using the whole avocado.
10. Dress the lettuce
Put the cold romaine into a large mixing bowl.
Add about half of the dressing.
Toss thoroughly with salad tongs.
Add more dressing a spoonful at a time until all of the lettuce is lightly but clearly coated.
Do not dump all of the dressing in immediately.
11. Add the croutons
Add about three-quarters of the croutons to the dressed lettuce.
Add about 2 tablespoons Parmesan.
Toss gently once or twice.
Save some croutons and Parmesan for the top so they stay crisp and visible.
12. Build the bowls
Divide the dressed romaine between two large bowls.
Arrange the sliced chicken across one side of each bowl.
Fan the avocado across the front or side.
Scatter the remaining croutons around the salad.
Spoon a little extra dressing over the chicken.
