Ginger-Turmeric Lentil Soup with Quinoa, Cilantro, and Greek Yogurt

COVID: I had a fever, sore throat, congestion, body aches, and almost no appetite today. I kept getting chills even though I felt hot, and I wanted something warm and brothy that I could eat slowly.

POTS: My dizziness was worse every time I stood up today, and my heart rate jumped fast. Being sick and barely drinking made it harder, so I wanted something with broth and salt today.

Vestibular migraine: I had no vestibular migraine symptoms today — no vertigo, no nausea, no vomiting, and no light sensitivity.

Lupus: I had no new lupus rash today, but it was hard to separate the body aches and fever from COVID. I also had no nausea from my anti-rejection meds today.

Ingredients

Makes 3–4 bowls

Soup base

  • 1 tbsp extra-virgin olive oil

  • 1 small yellow onion, finely diced

  • 2 carrots, peeled and diced

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, finely grated

  • 1 tsp ground turmeric

  • 1 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/4 tsp black pepper

  • 1 tbsp tomato paste

  • 1 cup red lentils, rinsed thoroughly

  • 4 cups chicken or vegetable broth

  • 1 cup water

  • 3/4 tsp kosher salt, then more to taste

  • 1/2 cup canned crushed tomatoes

Quinoa

  • 1/2 cup dry quinoa

  • 1 cup water or broth

  • Pinch of salt

Black lentils

  • 1/2 cup cooked black or French lentils


    or about 1/4 cup dry lentils, cooked separately

Toppings

  • 1/2 cup pasteurized plain Greek yogurt

  • Fresh cilantro, thoroughly washed and dried

  • 1–2 tbsp extra-virgin olive oil

  • Optional toasted seeds or chopped nuts

  • Optional chile crisp only if she is not nauseated and her throat is not irritated


Steps

1. Rinse the red lentils

  1. Put the red lentils into a fine-mesh strainer.

  2. Rinse under cold running water for about 30 seconds.

  3. Move them around with your fingers.

  4. Continue until the water runs considerably clearer.

  5. Drain well and set aside.

Red lentils break down as they cook, which is exactly what you want here. They will make the soup thick and creamy without needing cream.


2. Prepare the vegetables

  1. Peel the carrots.

  2. Cut them into small pieces, about 1/4 inch.

  3. Peel and finely dice the onion.

  4. Peel and mince the garlic.

  5. Peel the ginger and finely grate about 1 tablespoon.

Keep everything ready beside the stove.


3. Soften the onion and carrots

  1. Put a large soup pot over medium heat.

  2. Add 1 tablespoon olive oil.

  3. Add the onion and carrots.

  4. Sprinkle with a small pinch of salt.

  5. Cook for 6–8 minutes, stirring occasionally.

You want the onion soft and translucent and the carrots beginning to soften.

Do not rush this part. It gives the soup a much better base than dropping everything directly into broth.


4. Add garlic and ginger

  1. Add the minced garlic.

  2. Add the grated ginger.

  3. Stir continuously for about 30–45 seconds.

The mixture should smell strongly of ginger and garlic, but neither should brown.


5. Bloom the spices

Add:

  • turmeric

  • cumin

  • coriander

  • black pepper

  • Stir the spices directly into the vegetables and olive oil.

  • Cook for about 30 seconds.

The vegetables should turn bright yellow-orange from the turmeric.

If the pot becomes very dry, add 1 tablespoon broth so the spices do not scorch.


6. Cook the tomato paste

  1. Add 1 tablespoon tomato paste.

  2. Stir it thoroughly into the vegetables.

  3. Cook for 1–2 minutes.

The tomato paste should become slightly darker.


7. Add the lentils and liquid

  1. Add the rinsed red lentils.

  2. Stir so they become coated in the spice mixture.

  3. Add:

    • 4 cups broth

    • 1 cup water

    • crushed tomatoes

    • 3/4 teaspoon kosher salt

  4. Stir thoroughly.

  5. Bring everything to a boil.


8. Simmer the soup

  1. Once boiling, reduce the heat to low.

  2. Partially cover the pot.

  3. Simmer for 20–25 minutes.

  4. Stir every few minutes, especially near the bottom.

The red lentils will begin falling apart and thickening the broth.


9. Cook the quinoa separately

While the soup simmers:

  1. Put the quinoa in a fine-mesh strainer.

  2. Rinse for about 30 seconds.

  3. Drain.

  4. Put quinoa, 1 cup water or broth, and a pinch of salt into a saucepan.

  5. Bring to a boil.

  6. Reduce heat to low.

  7. Cover.

  8. Simmer 12–15 minutes.

  9. Turn off the heat.

  10. Leave covered for 5 minutes.

  11. Fluff with a fork.


10. Cook the black lentils if needed

If starting with dry black lentils:

  1. Rinse them thoroughly.

  2. Put them into a saucepan.

  3. Cover with several inches of water.

  4. Bring to a boil.

  5. Reduce to a simmer.

  6. Cook for about 20–25 minutes, until tender but still intact.

  7. Drain thoroughly.

You want the black lentils to stay whole so they contrast with the creamy red-lentil soup.


11. Check the soup texture

After about 20 minutes:

  1. Stir thoroughly.

  2. Taste a red lentil.

It should be extremely soft or almost dissolved.

If the soup is too thick:

  • add broth or water 1/4 cup at a time.

If it is too thin:

  • simmer uncovered another 5–10 minutes.

The finished consistency should be thick and creamy but still clearly soup.


12. Adjust seasoning

Taste the broth.

Add more:

  • salt if it tastes flat

  • ginger if you want it warmer

  • turmeric/cumin if it needs more depth

  • water or broth if the sick-day version needs to be thinner and easier to eat

For a COVID day, I would keep it mild rather than spicy.


13. Prepare the yogurt

  1. Spoon the Greek yogurt into a small bowl.

  2. Stir it until smooth.

  3. If it is extremely thick, add 1 teaspoon water and stir.

You want a cold, creamy spoonful that melts slowly into the hot soup.


14. Assemble the bowl

  1. Ladle the hot lentil soup into a wide bowl.

  2. Add about 1/3–1/2 cup cooked quinoa to one side.

  3. Add a few spoonfuls of black lentils beside the quinoa.

  4. Add a large spoonful of Greek yogurt in the center.

  5. Scatter thoroughly washed cilantro over the top.

  6. Drizzle with extra-virgin olive oil.

  7. Add seeds or nuts if using.
