Ingredients (2–3 rolls)
Spring rolls
2–3 rice paper wrappers
3–4 oz firm tofu, sliced into strips
½ cup shredded carrots
½ cup cucumber sticks
Handful butter lettuce or romaine
Fresh herbs if tolerated (mint or basil)
Sesame seeds (optional)
Almond dipping sauce
2 tbsp almond butter
1–2 tbsp warm water
Pinch salt
Optional: tiny drizzle maple syrup or honey
How to make it
1. Prep the filling
Slice tofu into thin, even strips.
Cut vegetables into matchsticks for easy rolling.
Lay everything out before starting.
2. Make the dipping sauce
Add almond butter to a small bowl.
Stir in warm water 1 tbsp at a time until smooth and pourable.
Add a pinch of salt and optional sweetener.
Keep sauce mild - no spice or acid.
3. Soften the rice paper
Fill a shallow dish with warm (not hot) water.
Dip one rice paper sheet for 5–8 seconds.
Lay flat on a plate or cutting board.
4. Assemble the rolls
Place lettuce first in the center.
Add tofu, vegetables, and herbs on top.
Fold bottom up, fold sides in, then roll tightly but gently.
5. Serve
Sprinkle with sesame seeds if tolerated.
Serve immediately with dipping sauce on the side.
Notes for symptom days
For POTS: pair with electrolytes or lightly salted broth.
For vestibular migraine: keep sauce thin and mild; skip herbs if smells are triggering.
For lupus: this works well on low-appetite days when hot food feels overwhelming.
