Symptom check-in

POTS: I had dizziness every time I stood up today and my heart rate jumped fast today. I wanted something salty and filling, so I seasoned the potato cakes well and used a savory yogurt sauce.

Vestibular migraine: I had no vestibular migraine symptoms today — no vertigo, no nausea, no vomiting, and no light sensitivity.

Lupus: I had no rash, no body aches, no fever, and no nausea from my anti-rejection meds today.

Disorder safety check

Condition

Works?

Why

POTS

Yes

Potatoes provide carbs, and the cakes plus yogurt sauce can be seasoned enough to make the meal sodium-forward

Vestibular migraine

Usually

Mild and easy to keep free of acidic or spicy ingredients

Lupus

Somewhat

Broccoli rabe, herbs, and olive oil are nutrient-dense, but this meal is mainly built around comfort and carbs

Transplant context

Yes, with care

Wash the greens thoroughly and use pasteurized yogurt

Recipe

Ingredients

Makes 4 potato cakes / 2 servings

Potato cakes

  • 1 lb Yukon Gold potatoes

  • 1 egg

  • 1/3 cup panko breadcrumbs

  • 1/4 cup finely grated Parmesan

  • 2 tbsp finely chopped chives or parsley

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder

  • 2–3 tbsp olive oil for pan-frying

Herby yogurt sauce

  • 3/4 cup pasteurized plain Greek yogurt

  • 2 tbsp extra-virgin olive oil

  • 2 tbsp chopped parsley

  • 1 tbsp chopped chives

  • 1 tbsp chopped basil or dill

  • 1/4 tsp garlic powder

  • 1/4 tsp kosher salt

  • Black pepper

  • 1–2 tbsp water to loosen

Broccoli rabe

  • 1 bunch broccoli rabe

  • 1 tbsp extra-virgin olive oil

  • 2 garlic cloves, thinly sliced

  • 1/4 tsp kosher salt

  • Black pepper

  • 2 tbsp water

Steps

1. Boil the potatoes

  1. Wash the potatoes thoroughly.

  2. Peel them if you want a smoother cake, or leave the skins on for more texture.

  3. Cut into large chunks.

  4. Put them in a pot and cover with cold water.

  5. Add a generous pinch of salt.

  6. Bring to a boil.

  7. Reduce to a simmer and cook for about 15–18 minutes, until fork-tender.

  8. Drain very well.

2. Dry the potatoes

  1. Return the drained potatoes to the hot pot.

  2. Leave them over low heat for about 1 minute, shaking the pot gently.

  3. Turn off the heat.

This helps evaporate extra water so the cakes hold together.

3. Mash the potatoes

  1. Mash until mostly smooth.

  2. Let the potatoes cool for about 10 minutes so the egg does not scramble when added.

4. Make the potato cake mixture

Add to the mashed potatoes:

  • egg

  • panko

  • Parmesan

  • chopped herbs

  • salt

  • black pepper

  • garlic powder

  • Mix until combined.

  • Do not overwork it.

  • If the mixture feels very wet, add another tablespoon of panko.

5. Shape the cakes

  1. Divide the mixture into 4 equal portions.

  2. Shape each into a thick round cake about 1 inch thick.

  3. Put them on a plate.

  4. Chill for 15–20 minutes if you have time.

Chilling helps them stay together in the pan.

6. Make the yogurt sauce

  1. Add the Greek yogurt to a bowl.

  2. Stir in:

    • olive oil

    • parsley

    • chives

    • basil or dill

    • garlic powder

    • salt

    • black pepper

  3. Add 1 tablespoon water.

  4. Stir until smooth.

  5. Add another splash of water if you want it slightly looser.

The sauce should still be thick enough to sit on top of the cakes.

7. Prepare the broccoli rabe

  1. Wash thoroughly.

  2. Trim the very ends of the stems.

  3. Cut the bunch into roughly 3-inch pieces.

8. Blanch the broccoli rabe

Broccoli rabe can be bitter, so blanching helps.

  1. Bring a pot of salted water to a boil.

  2. Add the broccoli rabe.

  3. Cook for 2 minutes.

  4. Drain immediately.

  5. Press out excess water gently.

9. Sauté the broccoli rabe

  1. Heat olive oil in a skillet over medium heat.

  2. Add sliced garlic.

  3. Cook for about 20–30 seconds.

  4. Add the blanched broccoli rabe.

  5. Add salt and black pepper.

  6. Add 2 tablespoons water.

  7. Toss and cook for 3–4 minutes.

You want the greens soft and glossy, not dry.

10. Pan-fry the potato cakes

  1. Heat a large nonstick or cast-iron skillet over medium heat.

  2. Add enough olive oil to lightly coat the bottom.

  3. Add the potato cakes.

  4. Cook for about 4–5 minutes on the first side.

  5. Flip carefully.

  6. Cook another 4–5 minutes on the second side.

The outside should be deeply golden and crisp.

11. Check the centers

The cakes are done when:

  • the outside is crisp,

  • the inside is hot,

  • and they hold together when lifted.

If they brown too quickly, lower the heat.

12. Plate

  1. Spoon a little herby yogurt sauce onto the plate.

  2. Put a potato cake on top.

  3. Add another spoonful of sauce over the cake.

  4. Pile the broccoli rabe on top.

  5. Finish with black pepper and a small drizzle of olive oil.

Serve warm.
