Ingredients (1 bowl)
1 to 2 cups cooked rice vermicelli (thin rice noodles)
1 breaded fish fillet (store-bought or homemade), cooked and chopped
1 to 2 cups mache or spinach
Salt and pepper
Optional simple add-ons (choose based on tolerance)
Olive oil + salt (very safe)
Sesame oil (small amount)
Coconut aminos or a mild soy sauce (for salt - skip if migraine-triggering)
Cucumber or avocado
Steps
Cook rice noodles according to the package. Drain and lightly salt.
Cook breaded fish (air fry, bake, or pan-fry) and chop into bite-size pieces.
Add greens to a bowl. Top with noodles and fish.
Season with salt and a small drizzle of oil if you want it less dry.
