Crispy Chicken Kale Quinoa Salad with Avocado and Red Cabbage

Vestibular migraine: I had no vestibular migraine symptoms today — no vertigo, no nausea, and no light sensitivity.
Lupus: I had body aches and a red rash across my cheeks today. I wanted an anti-inflammatory-leaning meal with leafy greens, avocado, quinoa, and olive oil that still had enough protein to make it a real lunch.

Recipe
Ingredients
Makes 2 generous salads
Crispy chicken
1 large chicken breast, about 10–12 oz
1/2 cup panko breadcrumbs
2 tbsp finely grated Parmesan, optional
1/2 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp black pepper
1 egg
1 tbsp milk or water
1–2 tbsp olive or avocado oil
Quinoa
1/2 cup dry quinoa
1 cup water or chicken broth
1/4 tsp salt
Salad
5–6 cups chopped kale
1/2 cup finely shredded red cabbage
1 avocado
1–2 tsp olive oil
Small pinch of salt
Dressing
3 tbsp extra-virgin olive oil
1 tbsp Dijon mustard
1 tbsp apple cider vinegar or lemon juice
1 tsp honey or maple syrup
1/2 tsp garlic powder
1/4 tsp salt
Black pepper
If the character is having a vestibular migraine day, I would replace the vinegar/lemon with a spoonful of water and keep the dressing mostly olive oil, mustard, and salt.
Steps
1. Cook the quinoa first
Put the quinoa in a fine-mesh strainer.
Rinse under cold running water for about 20–30 seconds, rubbing it lightly with your fingers.
Drain well.
Add quinoa, water or broth, and salt to a small saucepan.
Bring to a boil over medium-high heat.
As soon as it boils, reduce heat to low.
Cover with a lid.
Simmer for 12–15 minutes, until the liquid has been absorbed.
Turn off the heat but leave the lid on.
Let the quinoa steam for 5 minutes.
Remove the lid and fluff thoroughly with a fork.
Spread it on a plate for a few minutes so it cools slightly before going into the salad.
You do not want steaming-hot quinoa directly on the kale or it will wilt everything too aggressively.
2. Prepare the kale
Wash the kale thoroughly.
Dry it very well.
Pull the leaves away from the thick center stems.
Discard the stems.
Chop the leaves into small, bite-size pieces.
Put the kale into a large mixing bowl.
3. Massage the kale
This is important. Raw kale straight from the bag will make the salad tough.
Drizzle 1–2 teaspoons olive oil over the kale.
Add a small pinch of salt.
Use clean hands to squeeze and rub the leaves together for about 1–2 minutes.
Stop when the kale becomes:
darker green,
softer,
and noticeably reduced in volume.
Do not massage it until mushy.
4. Prepare the cabbage
Slice the red cabbage extremely thinly.
Chop the long strands a few times so they are easier to eat.
Add about 1/2 cup to the kale.
The small purple pieces visible throughout the photo are what give the salad some crunch and color.
5. Prepare the chicken
Place the chicken breast on a cutting board.
If it is very thick, slice it horizontally into two thinner cutlets.
This helps it cook evenly and gives you more crispy surface area.
Pat the chicken completely dry with paper towels.
Season lightly with salt and pepper.
6. Set up the breading station
Use three shallow bowls or plates.
Bowl 1:A small amount of flour is optional. If using it, add about 1/4 cup flour.
Bowl 2:
Crack in the egg.
Add 1 tbsp milk or water.
Whisk thoroughly.
Bowl 3:Mix:
panko
Parmesan
garlic powder
paprika
salt
pepper
7. Bread the chicken
For each cutlet:
If using flour, coat the chicken lightly and shake off the excess.
Dip completely into the egg mixture.
Let excess egg drip off.
Press the chicken firmly into the panko mixture.
Flip and coat the second side.
Press the breadcrumbs onto any bare areas with your fingers.
Set the breaded cutlets on a clean plate.
8. Cook the crispy chicken
Skillet method
Heat a large skillet over medium heat.
Add enough oil to lightly coat the bottom.
Let the oil heat for about 1 minute.
Add the chicken.
Do not move it immediately.
Cook the first side for about 4–5 minutes.
Check underneath. You want a deep golden-brown crust.
Flip carefully.
Cook another 3–5 minutes on the second side.
The chicken should reach 165°F internally.
Transfer to a cutting board.
Let rest for 5 minutes before slicing.
Resting keeps the juices inside instead of running all over the cutting board.
9. Make the dressing
In a small bowl or jar combine:
olive oil
Dijon
vinegar or lemon
honey
garlic powder
salt
pepper
Whisk vigorously for 20–30 seconds until the dressing becomes slightly creamy and emulsified.
Taste it.
If it is too acidic, add another teaspoon of olive oil or a tiny bit more honey.
10. Add the quinoa to the salad
Add the slightly cooled quinoa to the kale and cabbage.
Pour about half of the dressing over everything.
Toss thoroughly.
The goal is for the little quinoa grains to distribute throughout the kale like they do in the photo.
Add more dressing a spoonful at a time until everything is lightly coated.
Do not drown the salad.
11. Prepare the avocado
Cut the avocado in half.
Remove the pit.
Scoop the flesh from the skin.
Cut into bite-size chunks.
Add the avocado after most of the tossing is finished so it does not turn into guacamole.
Fold it gently through the salad two or three times.
12. Slice the chicken
Take the rested chicken.
Slice across the breast into thick strips.
Cut some strips into larger bite-size chunks if you want it to match the photo more closely.
The photo has irregular crispy chicken pieces rather than perfectly uniform slices.
13. Assemble
Divide the kale-quinoa salad between two bowls.
Arrange crispy chicken pieces throughout the salad rather than piling all of them in one spot.
Add any remaining avocado pieces.
Spoon a small amount of dressing over the chicken.
Finish with black pepper and a pinch of salt.
