Creamy Turmeric Chicken, Potato, Zucchini, and Kale Curry with Sesame

Symptom check-in
POTS: I had no POTS symptoms today — no dizziness when I stood up, no racing heart, and no trouble breathing with simple exercise.
Vestibular migraine: I had no vestibular migraine symptoms today — no vertigo, no nausea, no vomiting, and no light sensitivity.
Lupus: I had body aches, a low fever, and a red rash across my cheeks today. I wanted something warm and anti-inflammatory-leaning today, so I made a mild turmeric chicken curry with kale, zucchini, potatoes, ginger, and sesame.
Disorder safety check
Condition | Works? | Why |
POTS | Not specifically targeted | Potatoes provide carbs and the broth adds some sodium, but this is not intentionally built as a high-salt meal |
Vestibular migraine | Usually | Mild and easy to keep free of strong acid or chile heat |
Lupus | Yes | Kale, zucchini, ginger, turmeric, onion, sesame, and olive oil make this anti-inflammatory-leaning while chicken adds protein |
Transplant context | Yes, with care | Cook the chicken completely, wash the vegetables thoroughly, and serve the curry fresh |
Recipe
Ingredients
Makes 3–4 servings
Chicken
1 lb boneless, skinless chicken breast or thighs
1 tbsp extra-virgin olive oil
1/2 tsp kosher salt
1/2 tsp ground turmeric
1/2 tsp garlic powder
1/4 tsp black pepper
Vegetables
2 medium Yukon Gold potatoes
1 medium zucchini
1/2 large yellow onion
4 packed cups chopped kale
2 garlic cloves, minced
1 tbsp fresh ginger, finely grated
Curry sauce
1 tbsp extra-virgin olive oil
1 tsp ground turmeric
1 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp ground ginger, optional
1 cup low-sodium chicken broth
1 cup light coconut milk
1/2 tsp kosher salt, plus more to taste
Black pepper
Finishing
1 tbsp white sesame seeds
1 tsp black sesame seeds
1 tsp toasted sesame oil, optional
Fresh cilantro, optional
Steps
1. Prepare the chicken
Pat the chicken dry.
Cut it into large bite-size pieces.
Put the pieces into a bowl.
Add:
olive oil
salt
turmeric
garlic powder
black pepper
Toss until every piece is coated.
Let it sit while you prepare the vegetables.
2. Prepare the potatoes
Wash the potatoes thoroughly.
Peel them if you want, or leave the skins on.
Cut them into roughly 1-inch chunks.
Keep the pieces fairly even so they cook at the same speed.
3. Prepare the zucchini
Wash the zucchini.
Trim the ends.
Cut it lengthwise in half.
Slice into thick half-moons, about 1/2 inch thick.
Do not cut them too thin or they will disappear into the curry.
4. Prepare the kale
Wash the kale thoroughly.
Remove the tough center stems.
Tear or chop the leaves into medium-size pieces.
You want a lot because it wilts down dramatically.
5. Prepare the aromatics
Dice the onion.
Mince the garlic.
Peel and finely grate the ginger.
Keep all three near the stove.
6. Brown the chicken
Heat a large deep skillet or Dutch oven over medium-high heat.
Add the seasoned chicken in a single layer.
Cook undisturbed for about 3 minutes.
Flip the pieces.
Cook another 2–3 minutes.
The chicken does not need to be completely cooked yet, but it should have some golden color.
Transfer it to a plate.
7. Cook the onion
Reduce the heat to medium.
Add another tablespoon of olive oil if the pan looks dry.
Add the onion.
Add a small pinch of salt.
Cook for 4–5 minutes, stirring occasionally.
The onion should become soft and translucent.
8. Add garlic and ginger
Add the minced garlic.
Add the grated ginger.
Stir for about 30 seconds.
Do not let the garlic brown.
9. Bloom the spices
Add:
turmeric
cumin
coriander
optional ground ginger
black pepper
Stir continuously for about 30 seconds.
The oil should become bright golden from the turmeric.
10. Add the potatoes
Add the potato chunks.
Toss them through the onion and spice mixture.
Cook for about 2 minutes.
This gives the potatoes a little flavor before the liquid goes in.
11. Add the broth
Pour in 1 cup chicken broth.
Scrape the bottom of the pan with a wooden spoon to loosen any browned bits.
Add 1/2 teaspoon salt.
Bring to a gentle simmer.
12. Partially cook the potatoes
Cover the pan.
Reduce the heat to medium-low.
Simmer for 8–10 minutes.
The potatoes should begin softening but should not yet be completely tender.
13. Add the chicken back
Return the browned chicken to the pan.
Stir gently.
Cover again.
Simmer for 5 minutes.
14. Add the coconut milk
Pour in 1 cup light coconut milk.
Stir until fully combined.
Keep the heat at medium-low.
Do not boil aggressively after adding the coconut milk.
The sauce should become creamy and golden.
15. Add the zucchini
Add the zucchini pieces.
Stir gently.
Simmer uncovered for 4–5 minutes.
The zucchini should soften but still hold its shape.
16. Add the kale
Add about half the kale.
Stir until it begins wilting.
Add the remaining kale.
Fold everything together.
Cook for another 3–4 minutes.
The kale should become dark green and tender.
17. Check the chicken and potatoes
Before serving:
Cut into the thickest chicken piece and make sure it is fully cooked.
Pierce a potato with a fork.
The potato should be tender all the way through.
If needed:
Cover and cook another 2–4 minutes.
18. Adjust the sauce
If the curry is too thick:
add broth 2 tablespoons at a time.
If it is too thin:
simmer uncovered for another 3–5 minutes.
The sauce should be creamy and spoonable, with enough liquid to pool slightly around the vegetables like the photo.
19. Taste and season
Taste a spoonful with chicken, potato, and sauce.
Add more:
salt if needed
black pepper
turmeric for more warmth
ginger if you want it brighter
I would keep this mild rather than spicy.
20. Add the sesame
Turn off the heat.
Stir in the optional toasted sesame oil.
Sprinkle white and black sesame seeds generously over the top.
The sesame seeds should stay visible instead of disappearing into the sauce.
21. Serve
Spoon the curry into wide bowls.
Make sure each bowl gets:
chicken
potatoes
zucchini
plenty of kale
creamy broth
Finish with extra sesame seeds.
Add cilantro if using.
