Ingredients (1 bowl)
2 cups mixed greens (spinach/lettuce/arugula)
1/2 cucumber, chopped
1 tomato, chopped
4 to 6 oz chicken breast or thigh, cooked and cubed
Salt and pepper
Olive oil
Glaze
1 to 2 tbsp balsamic glaze (or reduced balsamic)
Optional: feta, avocado, or a slice of bread on the side
Steps
Season chicken with salt and pepper. Cook until browned and fully done, then cube.
Toss greens, cucumber, and tomato with a drizzle of olive oil and salt.
Top with warm chicken and drizzle balsamic glaze.
