Balsamic-Glazed Chicken Salad with Cucumber, Tomato, and Greens

Ingredients (1 bowl)

  • 2 cups mixed greens (spinach/lettuce/arugula)

  • 1/2 cucumber, chopped

  • 1 tomato, chopped

  • 4 to 6 oz chicken breast or thigh, cooked and cubed

  • Salt and pepper

  • Olive oil

Glaze

  • 1 to 2 tbsp balsamic glaze (or reduced balsamic)

Optional: feta, avocado, or a slice of bread on the side


Steps

  1. Season chicken with salt and pepper. Cook until browned and fully done, then cube.

  2. Toss greens, cucumber, and tomato with a drizzle of olive oil and salt.

  3. Top with warm chicken and drizzle balsamic glaze.
